This light, handy chef’s knife is 1095 tool steel selectively hardened at the cutting edge. The blade is convex-ground to a zero-edge. The full-profile tang is sandwiched with Walnut scales which are hand-sanded to 1500-grit and finished with lacquer.
This is a light-weight knife with excellent balance and the handle is suited to small to medium hands.
